I have been trying to make more soup at home. My goal was to make a different soup for every day of the week. Only in a perfect world! Let’s face it, my friends, like most working and busy parents, we are also constantly on the go and rushing out of the house four days a week. To be real, I was not able to make soup for each day of the week, but I have been making more soups than I usually would have made otherwise.

As we all know, soups are an easy and healthy way to get goodness and a full range of vegetables in your diet without too much effort. In my household we have a handful of recipes for soups that we all enjoy. One of our favourites is cream of broccoli and potato soup.

It is a very easy soup to make and it tastes amazing. You can definitely make this soup with only potatoes or only broccoli, still following the same steps. Actually, you can use this same recipe as your foundation to make several other different soups as well, such as cream of pumpkin, cream of potato and leek, or cream of sweet potato or yam soup.

 

Ingredients:
6-8 potatoes (I recommend russet potatoes for a smoother consistency, texture and taste)
1 small onion finely chopped
6-8 flocks of broccoli
1 cup of celery cut into small pieces (optional)
3 cups of vegetable stock (or more if needed)
2 tablespoons of vegetable oil or olive oil (or butter)
½ cup of heavy cream (or milk if you wish for it to be lighter)
Salt and black pepper to taste
A few cilantro leaves to garnish

For a vegan option you can use cashew milk (or cream).

Instructions:
In a big pot add the oil and chopped onions. Sauté until onions are soft but not browned. Add celery and potatoes and stir them on low-medium heat for 5 minutes. Make sure not to brown them. Add broccoli and stir for another 2-3 minutes. Add salt and black pepper to your taste. Add the vegetable stock and let it simmer until potatoes are cooked. Judge the consistency based on your preference. If the soup is too thick, add a little more water.
Once the potatoes are cooked, carefully blend the soup with a handheld blender until it is nice and smooth. Finally, stir in the heavy cream and turn off the heat.
Add more salt and pepper if needed. Garnish with a few finely chopped cilantro leaves and serve.
