Any recipe that contains the name “pound cake” immediately catches my attention. I love baking pound cakes and always been interested in trying different recipe. Since Valentine is approaching why not try to make something extra pretty and scrumptious.

You can make this Blueberry lemon pound cake with fresh blueberries or frozen. It is very simple to make and looks exceptionally beautiful, aromatic and a complete showstopper.

Ingredients for blueberry lemon pound cake:

  • 3 cups of all purpose flour
  • 1 cup butter room temperature
  • 3 large eggs
  • 1 cup of sugar
  • 3/4 cup of milk
  • 2 Tablespoon of yogurt (mix with milk)
  • 1 tablespoon of baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon of rosewater (if no rosewater substitute with vanilla)
  • 1 cup of blueberries
  • zest of two lemons (I usually prefer peeling lemon skin thinly and cut it in small strips, you get more aroma and bite)

Note: We are making two sets of glaze. One plain white glaze and one with blueberry juice to get the nice pink/purple colour.

Ingredients for simple glaze:

  • 3/4 cup of icing sugar
  • 1- 2 table spoon of lemon juice
  • a tiny pinch of salt

Ingredients for blueberry glaze:

  • 1/4 cup of blueberries- grind blueberries and drain through a fine mesh strainer. We need the condense blueberry juice for the colour of the glaze
  • 3/4 cup of icing sugar
  • A tiny pinch of salt

How to make the batter:

Turn oven to 350 degree Fahrenheit. Mix all dry ingredients together and put aside. In an electric mixer, beat butter until soft, add sugar, lemon zest or tiny lemon slices, rosewater or vanilla and beat for 5 minutes. Add eggs one at the time and beat for one additional minute. Add half of flour mix slowly, followed with milk and yogurt mixture and the remaining flour. Mix for 1 minute. Last add blueberries and fold until equally incorporated with the batter.

Pour into your desirable pan (cake mold) and bake until golden brown and a toothpick comes out clean if pocked in the middle. Remember the batter is enough to make two pound cakes. While the cake is baking make the glaze.

How to make the glaze:

to make the simple white glaze. In a bowl add the 3/4 cup of icing sugar, tiny pinch of salt and mix one tablespoon lemon juice at the time to reach the right consistency. The glaze should not be too runny.

To make the blueberry glace, add 3/4 cup of icing sugar and tiny pinch of salt in a bowl mix with grinded blueberry juice little bit at the time to reach the right consistency.

Once the cake is done, drizzle the cake with the white glaze first and let it set for a few minutes. Follow with blueberry glaze on top. By double layering the icing it allows the blueberry colours pop even more.
