At my home we all love banana bread, and I usually make this recipe at least once a week. Since it is my go to recipe, I have adjusted the measurements for sugar and oil to a minimal amount, which makes this yummy treat a more “guilt free” version of a traditional Banana bread.

Being a “foodie” myself who loves to cook and bake, I have to admit I am not the best when it comes to following a long and complicated recipe. I love to watch videos but often avoid reading the instructions. Sometimes when I try a new recipe, my husband makes me promise to follow the ingredient list accordingly and not add a new “masala” of my own.

keeping that in mind, I always try to make my recipes as easy and forgiving as I can. This simple and easy banana bread recipe is an ideal example of that. You can add more ingredients such as chocolate chips, walnuts, cinnamon and other spices, or leave it as is. Either way it will come out perfect each time.

Ingredients:

  • 1 3/4 cup of all purpose flour
  • 1 Teaspoon of baking soda
  • A pinch of salt
  • 1/3 cup olive olive oil
  • 1/2 cup light brown sugar
  • 2 eggs
  • 1 Tablespoon of vanilla
  • 3 Mushed bananas – (I personally don’t like the taste of overly ripe bananas! I only use just perfect and beautiful bananas :), which in my opinion makes the cake taste so much more fresh and yummy)

How to make the banana bread:

  1. Sift together the flour, baking soda and salt and put it aside.
  2. In a big bowl whisk together eggs, sugar, and olive oil until combined.
  3. Add vanilla and mushed bananas and continue to whisk.
  4. Add flour mixture and mix everything until well combined. At this point I use a spatula to mix.
  5. Transfer the batter into a loaf pan lined with parchment paper and bake at 350 degree Fahrenheit for 45 minutes – 1 hour or until it is golden brown and if you poke a toothpick in the middle it comes out clean.

Let it cool before cutting into slices. Enjoy!
