Green Beans!! If you asked me 10-15 years ago what was my least favourite vegetable? My answer would have been Green Beans! I hated it! Today however, that answer has been changed. Now, green beans in fact are my most favourite vegetable. I am not sure how and when I have developed an enormous liking for this green vegetable, but I am glad my liking has shifted. I definitely don’t want to miss out on this healthy option. I love green beans in every form, baked, cooked, curried or even raw.

This is a Fijian style bean curry, inspired by my beautiful mother in-law’s recipe that I enjoy eating every time we are over at her place. This recipe taste light and fresh. You can enjoy eating this recipe with roti, flat bread, rice, pasta or just by itself.

Ingredients:

  • Green beans (washed and sliced or chopped in to smaller pieces)
  • 1 small onion (finely chopped)
  • 2-3 garlics (crushed)
  • 1 tomato (finely chopped)
  • Salt, pepper, and chilli to taste
  • 1 teaspoon curry powder
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • 1/2 cup of water
  • 2 tablespoon of ghee or vegetable oil

In a pan add oil and sauté onions. Once translucent add tomatoes and cook until tomatoes are soft. Add cumin seeds, mustard seeds, curry powder, turmeric powder, salt, pepper and chilli. Stir for 1-2 minutes and add the green beans.

I like my curry slightly saucy, therefore I add water and let it simmer on low heat for 5-6 minutes or until the beans are tender. If you wish you can omit adding water, just cover the pan with a lid on low heat and let it steam until the beans are tender.
