To make this soup, you need a variety of mixed potatoes such as yukon gold, yams, sweet potatoes, yellow and red potatoes.  Chop everything in to small pieces, season and bake in the oven until soft and tender.

You can season the potatoes however way you wish, but one of my most favourite seasoning is the simple paprika and dill combo. I love this seasoning, because it has a rich and long lasting flavour.

Every Sunday, I bake a big batch of mixed potatoes and vegetables as a meal prep for my husband and I to take to work for lunch. Most Sundays I bake an extra tray for this soup.  This Creamy baked potato soup is one of my favourite soups.

Ingredients for the baked potatoes:
  • Potatoes (all types, yellow, red, sweet potato and yams— the amount depends on your family and portion size)
  • 2 cups of chopped kales
  • Salt and black pepper to taste
  • 1 tablespoon of dill
  • 1 tablespoon garlic powder
  • 1 tablespoon paprika powder
  • 1 teaspoon cumin powder
  • 1-2 crushed garlics
  • ¼ cup of olive oil
Ingredients to make the soup:
  • 1/2 cup of milk
  • ¼ cup of half and half or heavy cream
  • Add water to adjust consistency if needed.

Ps. You can adjust the amount spices, milk, cream and water based on the amount of potatoes you are using!

How to prepare and season potatoes:

In a big bowl add the olive oil, and all the spices mix until combined.  Add the mixed potatoes and kale and mix until everything is coded.  Line a baking sheet with aluminum foil and place the potatoes flat. Do not over crowd.  If too much potatoes use a second tray.

Cover the tray(s) lightly with another sheet of aluminum foil and bake at 350 degrees until potatoes are cooked and soft.   I usually cut the potatoes into small pieces and the reason I cover the trays are to speed the baking process.  We have to be mindful about saving energy.

How to make the soup:

Once potatoes are baked, remove from oven and let it cool. Transfer the baked potatoes in to a pot add the milk, cream and water if needed. Blend everything with a hand held mixer or in a food process until smooth and creamy. Once you reach the desired consistency turn the stove to medium low and let the soup come to light boil. Add more water or milk to finalize consistency before serving. You can sprinkle some dry dill to garnish.
