I love Oreos and anything that has Oreos in it. I was thinking of making an Oreo cake for past 2 months.  This might sounds totally crazy, sometimes I taste things in my mind.  I get this feeling of how something should taste like and I try to create that taste by generating a recipe. My husband always laughs when I have these crazy moments. A lot of times I succeed by getting the taste right when creating a recipe and other times my failure leads to new findings.

In preparation for this “Oreo cake” of mine, I have been buying a package of Oreo cookies every time I went shopping. By the time  I was ready to make the cake the Oreo cookies were gone. Then I go shopping again and this cycle has been repeating itself for the past two month!!  I am not going to deny that I might be slightly addicted to Oreo cookies:)

This week finally I put some time aside to make my cake before we eat all the cookies again. For this cake, I am going to use a simple and easy chocolate cake recipe. We have to remember, when making any layered cake to use a recipes that is moist.  If your recipe comes out on a dryer side use one of my favorite tricks.  Simply add 1-2 table spoon of jam and mix it well with half a cup of water (add a little extra water if need). Cherry jam is my favorite, it adds a mild flavor without interfering with integrity of the cake itself. Drizzle water/jam mixture over the cake before icing the cake. If you wish, you can run the mixture through a coffee strainer to avoid any big chunks of cherries as destruction inside the cake.

This Recipe is my own.  If you want to make a cake that looks store bought but fully homemade then this is your recipe:)

Ingredients for the Cake:

  • 2 cups of Chocolate Cake mix (Betty Crocker Cake Mix)
  • 1 cup of all-purpose flour
  • ¼ cup of sugar
  • 3 eggs
  • 1 teaspoon of Vanilla
  • 1 1/2 cup of milk 
  • ½ cup of butter melted 
  • ½ cup of coco powder

Ingredients for the Icing:

  • 1 cup butter room temperature
  • 1 ½ cup of icing sugar
  • 1 package of Jello chocolate pudding
  • ½ cup of milk (a little less or more based on consistency of the icing)
  • 1 package of Oreo cookies (separate the white filling from the cookies, save enough cookies to garnish the cake, grind or crush the rest of the cookies in to crumbs)

How to make the Cake:

In an electric mixer, mix butter with sugar till light and fluffy, add eggs and vanilla and beat until mixed well together. Add the flour and cake mix, followed by milk.  Mix for 1 minute until nice and smooth.

Pour the batter into two 8”- 9″ round or square baking pans. Bake on 325 degrees for 23- 30 minutes.

How to make the icing:

For icing mix butter until light and fluffy. Add icing sugar while setting the mixer at low speed mix for 2 minutes, followed by Jello pudding powder. Add all the white filling of the Oreo cookie. Add milk slowly and let it mix before adding more.  Judge the amount of milk based on the consistency of the icing.

Putting the cake together:

Let the cake cool down completely before icing. Spread a thick layer of icing on bottom layer of the cake.  Sprinkle a layer of Oreo cookie crumbs. Place the second layer and cover the entire cake with icing. Decorate and garnish the cake to your liking.
