Turnip soup: The ideal remedy for any common cold and flu symptoms

Growing up, every time we caught a cold my Grandma was in the kitchen making us turnip soup.  As a child it was almost a given to have turnip soup whenever we got sick. Reading about turnip and its benefits, now I understand why it was so effective.  Turnips are packed with vitamins and antioxidants. Usually, turnips are easy to come by during the winter time.

This soup is light and fresh tasting.  My kids are usually very picky but they love this soup. They too got used to having it when they come down with a cold.  But often they actually ask for this soup even if they aren’t sick!

I love making this soup often because it is very healthy and also so easy to make.  This soup freezes well for keeping in your freezer and pulling out on a cold rainy day.

 

Ingredients:

1 small onion (finely chopped)

1 small tomato (cut into small pieces)

2 midsize turnips (cut into small pieces)

1 carrot (cut into small pieces)

1 small potato (cut into small pieces)

1-2 cups of finely chopped kale

1-2 sticks of celery (cut into small pieces)

¼ cup of soup pasta (Anelletti or Anelli) optional

2 garlic cloves (minced)

Salt and pepper to taste

½ tablespoon of oregano

½ tablespoon of coriander powder

Pinch of cumin seeds

4-5 cups of chicken broth (you can make this completely vegetarian by omitting Chicken stock and using vegetable stock)

Vegetable oil and some olive oil

In a pot, add the oil and onions. Sauté until lightly golden brown. Add tomatoes and garlic, stir until it is soft. Add turnips, carrots, potatoes, and celery. Stir for another 3-5 minutes. Add all the spices and salt and pepper to taste. Keep in mind if your stock has salt,  then minimize salt portion.  Add the mini pasta if you wish. Add the chicken (or vegetable) stock with some olive oil. You can add extra water or more stock if needed. Let it come to a boil and then reduce the heat and let it simmer until the potatoes, and turnips are cooked.

 

If you wish to freeze the soup, let it cool and transfer the soup into smaller, freezer-safe containers before placing in the freezer.
