My kids have been asking me several times to bake cookies with smarties or m&ms. Usually after Halloween we make these cookies and use our leftover chocolates for that.  I was so busy with work that I had no time to bake lately. To redeem myself from a long forgotten promise, we put some time aside last weekend and baked some cookies.  I took all the leftover chocolates from their Halloween stash.

The kids suggested that we should make nice soft and chewy cookies with an added bite of crunchy smarites/ m&ms on top.  I love the idea of soft and chewy cookies with a crunchy bite on top.   Why not.

This super versatile and easy recipe for soft and chewy cookies is one of my favourites. You can take this recipe and add any toppings and it would still come out just perfect each time.   I have made this cookie recipe with raisons, chopped almonds, walnuts, peanuts, and now with smarts and m&ms.

 

Ingredients:

  • 2 ½ cup of all –purpose flour
  • 1 cup of packed light brown sugar
  • ½ cup of sugar
  • 1 cup of butter (room temperature)
  • 2 eggs
  • ½ tea spoon baking soda
  • 1 tea spoon salt
  • 1 table spoon of vanilla
  • ½ tea spoon of ground cardamom
  • 1 cup of Smarties or m&ms or both ( plus a handful to put on top of each cookie)

Pre heat oven to 350 Fahrenheit. With an electric mixer mix together butter and both sugars till soft and fluffy. Add eggs one at the time till well incorporated. Add Vanilla and salt followed with flour and baking soda. Once everything is combined together add Smarties mix and mix lightly.

 

Prepare baking sheets with parchment paper, take a spoonful of cookie dough and roll it in to slightly flat round shapes and place it on top of baking sheets about one inch apart. Place a few extra smarties or m&ms on top to finish it off. Bake on middle rack for 10- 12 minutes or till it is very lightly brown.

After it is baked let it set to cool for  10 minutes.

Warning!! These cookies will go fast. If you are planning to make these cookies, you might as well make 2 batches, because before you even get a chance to make a cup of tea and set down most of it will be gone already.
