This Oatmeal Banana Bread is versatile, and super easy to make, a perfect snack option for any time of the day. One of our favourites.
Our summer holidays are almost coming to an end, and we are about 3 weeks away from school. Both my kiddos are really excited to go back to school, and I am excited for them. I am really emotional to see that my daughter is joining her big brother at the middle school. So cliché to say this, but really, “where did the time go”!!
My least favorite part about school is preparing lunches. Both my kids are very picky and they give me hard time.
When it comes to preparing lunches, I have a variety of recipes that are easy to make, healthier options, and approved by my “picky eaters”.
This Oatmeal Banana Bread has been added to our list of snacks for this fall. My son’s loves it. My daughter however has never been fond of any kind of cakes or muffins. The life of being “a mama”! I am pretty sure I am not the only one.
This recipe is very versatile and you can add or omit nuts, seeds, or chocolate chips.
Ingredients for this Recipe:
- 2-3 bananas (I usually don’t like the overly ripe bananas. I feel the banana bread taste much better if the bananas are nice and “healthy” ripe, not almost black, soft and mushy ripe)
- 2 cups of all-purpose flour
- ½ cup of oatmeal (I use the 1 minute quick oat)
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 eggs
- ½ cup light brown sugar
- 6 tablespoon of butter (melted)
- ½ cup of milk
- 1 tablespoon of Vanilla
- 1 teaspoon of cardamom (optional if you don’t have it)
If you decide to add nuts, seeds or chocolate chips, stay within 1/2 – 1 cup measurement
How to make oatmeal banana bread:
You don’t need a mixer for this recipe.
In a bowl whisk all dry ingredients. Flour, baking soda, salt, cardamom, and (nuts). In a separate bowl mash bananas with a fork or potato masher. Add 2 eggs, brown sugar, vanilla, milk and melted butter and mix well. Incorporate wet with dry ingredients. Transfer the batter into a square pan and bake at 350 degree oven for 35- 45 minutes or until the top is golden brown and a tooth pick comes out clean.
The baking time may vary depending on the baking tray you use. I usually use a square glass pan to speed baking process and save some energy.
